Happy Birthday To Me

Healthy Eating

I've got to get healthy. Lose the weight. Blah Blah Blah!! It sucks!! So I Pin and Pin on Pinterest healthy food and yoga. I have yet to do dog pose.

I know cooking. So I decided to buy frozen tail on shrimp at Target for $9.00. I used juice of a whole lemon. Garlic (1 Tablespoon) from jar minced garlic. Sauteed shrimp till pink. It's simple. Look on YouTube if you are unsure.  I developed these recipes from multiple recipes.

Boil what ever pasta you want. I use linguine because that's what I had. I prefer angel hair.

Grate fresh (real) Parmesan cheese. I don't use this much! Cost is too much. Maybe use left over a in a Ceasar Salad.

My husband and daughter didn't eat the spinach. I used powder garlic. (Spice Island is very fine and good quality. Put in your hand to keep from over over using on bread.) Small amount olive oil. You don't want spinach drowned in oil. Salt and pepper. Stir put top on, I used glass top to see spinach. Stir after few minutes. You are sweating spinach.

Tomatoes and Mushrooms are in olive oil in 350 oven. 15 minute. Garlic, salt , pepper. Tomatoes could be cooked more, but would have to be without mushrooms. 15 minutes is limit for mushrooms.

We used left over shrimp for tacos the next night. Not bad for $9.00 shrimp. I don't work  because i have Fibromyalgia and we have to be economical. I have leftover pasta veggies and cheese for other meals.

Simple Things

Best Guacamole I've ever had from a local Mexican restaurant. Not fancied up with sour cream and tomatoes. Just lime, garlic and avocado. It's the simple things in life that make me happy.

Yummy

Home made Peach Pie.  Its so simple!  I will give you simplified instructions.  I apologize I was taught how to cook by my Grandma, Kathleen and I rarely follow a recipe. Kathleen was a true southern lady who just cooked and rarely had recipes. I sure do miss her.
Any kind of fruit pie.
Enough fruit to fill up a 9" deep dish store brand pie shell (dough variety)
Peel and slice fruit into 1/2" cubes
Place in pie pan
About 1 cup sugar mixed with 2 Table Spoons Flour.
Poor sugar/flour mixture on top of fruit.
Place 4 Table Spoons Butter (I don't use fake butter) on top of sugar/flour.
Place other pie crust on top of fruit. You will be putting crust upside down. Wet crust and sandwich two crust together with fingers pinch edges together.  I use fork to seal it together after pinching. Place 4 holes in center for ventilation.
Line a baking sheet with aluminum foil. Juices will leak out. Save other pie pan to place sticky pie in clean pan.
You may find complicated recipes that will not leak, but this is my way. I don't like to have to think about things when I cook.
I used lemon juice to keep peaches from browning.

Things that make me tick. Fun things I love & like. Ocean, Sand & Salt are things I love, but I live in the rural country of Eastern North Carolina, so I don't see much of the Beach except in my dreams of what & where I want to be.  I just live with the spirit of the Ocean in mind!
